Description

Tadafusa Japanese knives are made in Japan by skilled craftsmen. Equipping yourself with a Tadafusa knife is a very good idea, as it will last you a long time and allow you to spend a pleasant moment in the kitchen.

This 17cmsantoku knife is forged, i.e. made from a single solid piece of steel. This eliminates the need for numerous welds or sticking points: the knife is solid and well-balanced.

The core of the blade is made of SLD steel. This is produced by HITACHI steelworks. It was originally used for tool production, but its very fine grit and advantageous mechanical properties enabled it to be integrated into the world of cutlery very quickly.

Its pure composition is very interesting: its carbon content is 1.6% (whereas the average in cutlery is between 0.5 and 1%, depending on the blade and the manufacturer), and its chromium content is 12.6%. This combination makes the blade very hard, making it easier to sharpen and sharper, while remaining corrosion-resistant (thanks to the chromium). The end result is highly resistant to torsion and wear.

This steel is currently little used in cutlery. It is, however, a high quality steel, enabling you to distinguish your equipment from others. Its final hardness is around 62HRC, so you'll need to sharpen more often, as the cutting edge will last longer.

The SLD core is then surrounded by a layer of mild stainless steel, to protect it and increase its anti-corrosive capacity. The interwoven layers of steel can also be seen on the base of the cutting surface!

Finally, the range's logo has been embossed on the cutting surface: further proof of authenticity!

The handle is made of walnut, a hard-wearing and durable precious wood. It features a unique grain and an attractive warm color.

To care for it, we recommend gentle hand-washing - do not use your dishwasher. The knife should also be wiped dry after washing, so as not to leave it in contact with moisture for too long. As its core is highly enriched with carbon, it is not advisable to leave it to soak.
