This santoku knife is a versatile model, considered to be the Japanese-style chef's knife. Its slightly curved blade creates a natural rocking motion when cutting. It is available in several sizes :

The blade is made of 1K6 stainless steel, a solid alloy enriched with molybdenum and vanadium and 0.8% carbon, which achieves a hardness of 58 HRC on the Rockwell scale, an excellent ratio between edge life and ease of sharpening. The knife's convex cutting edge makes it pleasant for both right- and left-handed users to use over the long term. The knife is pre-sharpened in 3 stages to guarantee optimum cutting quality.
The handle is a perfect continuation of the blade, and is made of 18/8 stainless steel. It is hammered, and its convex shape fits naturally into the palm.
