The Shun Nagare series of kitchen knives is both effective and visual. Here's a brief description that's sure to convince you!
First of all, why choose a chef's knife? The chef's knife is quite simply the most widely used knife in the kitchen. It features a long blade that can be used to cut meat, vegetables, fruit or fresh herbs. In fact, it's perfect for chopping, mincing and mincing!
The blade of this 20cm chef's knife is made from a combination of 2 steels. The first is a rather hard steel, VG10, while the second is a more flexible steel, VG2.
These 2 steels are complementary and form the Dual Core. VG10 is a particularly interesting steel, as it is rich in carbon (around 1%), but also in chromium. It therefore offers the strength of a carbon blade, while remaining stainless (thanks to the chromium). The combination of VG2 and damascus gives the blade an appreciable combination of strength and flexibility. The blade reaches around 61 HRC on the Rockwell scale, and even though it's harder than a standard blade, it's still easy to sharpen.
Damascus is 72-layer. This consists of alternating layers of steel, folded one on top of the other (counting the core). The damascus is very pleasing to the eye, and demonstrates the manufacturer's high level of expertise! Kai also holds a unique patent on this blade, as the Shun Nagare knife is one of the very few to feature a damascus pattern extending all the way to the bottom of the cutting edge. In fact, you can see that the VG2 and VG10 criss-cross the entire cutting surface.
The handle, meanwhile, is made of pakkawood composite material. This is made from compressed wood strips blended with high-pressure resin, making it future-proof. It combines the warmth and authenticity of wood with the strength of resin. In fact, it's anti-bacterial, moisture-resistant and complies with the hygiene criteria imposed by food service standards.
What's more, it has a unique shape, with a rounded base, for easy handling. The rounded shape nestles naturally in the palm. The handle is then completed by 2 stainless steel rivets, to assemble the running blade inside its surface.
Finally, the knife's design is both sober and effective! The damask and veining of the handle add a touch of refinement to your kitchen equipment.
KAI is renowned the world over for its lines of knives and accessories. They are used by professional chefs and home cooks alike. This popularity is due to the durability and optimum finish of these knives. They are the epitome of expertise!
