This Bread knife has a finely serrated 23cm blade, perfect for slicing bread and buns without damaging them. You can easily cut through crust and crumb, without crushing the food.
The blade is made from 2 steels. The first is a solid steel, VG10, while the second is a more flexible steel, VG2. These 2 steels are complementary and form the Dual Core.
VG10 is particularly interesting because it is rich in carbon (around 1%), but also in chromium. It therefore has the hardness and holding power of a carbon blade, while remaining stainless (thanks to the chromium).
With the addition of VG2, the blade offers a sought-after blend of strength and flexibility, accentuated by the damascus finish. In the end, the blade achieves around 61 HRC on the Rockwell scale, and even though it's harder than a standard blade, it's still easy to sharpen.
The knife features a 72-layer damascus (i.e., layers of steel, folded one on top of the other, counting the core in the center). The damascus is very pleasing to the eye, and demonstrates Kai's high level of expertise! Kai also holds a specific patent on this blade, as the Shun Nagare knife is one of the very few to feature a damascus pattern extending right down to the cutting edge. In fact, you can see that the VG2 and VG10 criss-cross the entire cutting surface.
The handle is made of a composite material: Pakkawood. This is made from compressed wood strips mixed with high-pressure resin, making it future-proof. It is anti-bacterial, moisture-resistant and meets the hygiene criteria imposed by food service standards.
Its unique curved base makes it easy to grip. The rounded shape fits naturally into the palm. The handle is completed by 2 stainless steel rivets.
