Discover Shizu Hamono Yuri Yamato Japanese knives on KnifeLeader! Yuri Yamato knives come in two designs, one in light colors (Yuri), the other in darker tones (Yamato). The materials used in the design of these knives enable you to use them for a long time, while enjoying their efficiency over the long term. The blade is designed on a simplified damascus pattern, with a so-called San Mai structure (3 layers, i.e. 1 layer of steel folded in 2 over the blade core). The core is made of AUS8 Japanese stainless steel, enriched with carbon, molybdenum and vanadium, to ensure a good ratio between edge retention and ease of sharpening. This core is then surrounded by a layer of SUS1A-1 steel, and you can see the different layers at the bottom of the blade, on the cutting edge. Yamato blades are hammered for an original look. The handles are made of laminated wood, oak-colored for the Yuri, and black for the Yamato.
