This construction balances the blade's overall hardness, while protecting its core and improving its resistance to wear. Damascus also offers a unique visual effect, with wavy patterns running across the entire cutting surface.
The core of these blades is made from VG10 Japanese steel, a stainless alloy renowned for its excellent performance in the kitchen. Its composition includes approximately 1% carbon, combined with vanadium, molybdenum and cobalt. These elements strengthen the structure of the steel, enabling it to achieve a hardness of around 60 HRC on the Rockwell scale. This level of hardness ensures excellent edge retention, while retaining a sharpening capacity accessible to the stone.
Around this core, the blades are wrapped in 69 layers of damascus stainless steel, alternating harder and softer steels. This superimposition contributes to the blade's overall strength, resistance to mechanical stress and greater tolerance to micro-shocks encountered during cutting.
