Most people simply call it acurved-blade knife. It's the ideal accessory for mushroom picking. Its shape prevents damage to the mushrooms, and its brush allows you to clean them without running them through water, the aim being to preserve all their flavours.
The first maintenance tip is to never put your knife in the dishwasher. Simply rub the blade with a sponge and washing-up liquid, rinse with lukewarm water and dry with a cloth before closing. Then remember to store your mushroom knife in a dry place, in the folded position.
Sharpening the blade with a stone is done on a dry, degreased blade. Lightly wet the stone, press the edge of the blade against the stone and move back and forth.
