WHICH OVEN DISH TO USE?
Today's oven dishes come in all shapes and sizes! On the one hand, they come in a variety of materials: ceramic, porcelain, stainless steel... For example, Emile Henry and Peugeot dishes are ceramic oven dishes that enable uniform cooking, as ceramic perfectly restitutes heat. It's a very healthy material, and above all, durable! Porcelain oven dishes, like Revol dishes, are extremely robust and naturally non-stick. They'll last you many years in the kitchen! There's also the classic stainless steel baking dish ( Beka brand!), widely used and appreciated in professional kitchens for its durability and sturdiness. Of course, these dishes come in a variety of sizes: rectangular oven dishes, square oven dishes and even individual oven dishes; and in a variety of shapes: ceramic tourtière or ceramic soufflé mould. On the sweet side, you'll need to choose the right molds and dishes. Cake moulds offer a wide range of possibilities for making tarts, madeleines, brioches, savarins, cakes and other delicacies. But that's not all: pastry chefs also make extensive use of silicone baking mats or baking trays to bake different types of dough and sponge cake.
INCREASINGLY VERSATILE BAKING Utensils!
For greater practicality, everything is becoming increasingly versatile. This is also true of Utensils! Some Utensils, such as frying pans and saucepans, used to be designed for use only on electric hobs, glass-ceramic hobs, gas hobs and, in some cases, induction hobs. Now you can use them in the oven too! This is particularly true of Cristel Utensils, which offer all-stainless steel cookware with removable handles that you can use on the stove and in the oven! Similarly, the cast-iron cocotte, as well as being one of the iconic Utensils of French cuisine, can also be used in two ways!
