What's the point of a pastry bag?
The pastry bag has multiple functions. First and foremost, it's used to shape your pastries, i.e. to give specific forms to your preparations for making meringues or chouquettes, for example. For this purpose, pastry bags come in various sizes and models: smooth or fluted, depending on the look you want to achieve. Next, you can use professional pastry bags to fill hollow pastries such as profiteroles. Gently push the tip into the molded pastry to insert your filling, such as mousse or crème pâtissière. Finally, the pastry piping bag is perfect for decorating all your cakes. There are many different types of pastry tip available, enabling you to create masterpieces just like the greatest pastry chefs! You just need to get the hang of it!
Which pastry bag to choose?
Choose your pastry bag according to your needs, i.e. whether you'll be using it a lot or not. The most practical is the disposable pastry bag, especially if you have several preparations to work with, such as ganaches in different flavors. It's a single-use bag, so once you've used it, throw it away. Then there's the reusable pastry bag, such as the nylon pastry bag, which is solid and of good quality, but needs to be well cared for by hand-washing and drying immediately to avoid odors becoming impregnated. Silicone pastry bags are a good compromise, as they are resistant and, above all, easy to wash and dry. For pastry chefs, prefer a professional piping bag, designed by industry specialists and made from materials that comply with HACCP standards.
