An extra-fine sharpening steel is recommended for polishing the cutting edge. It's a must-have for butchers and other trades requiring precise, careful cutting of food, without tearing fibers. The sharpening provided by this type of knife will make your blade razor-sharp. Beware, however, that an extra-fine sharpening steel will be ineffective on a dull blade, which is why we recommend purchasing an abrasive whetstone or diamond sharpening steel, to recreate the sharpness of your blades when necessary. An extra-fine sharpening rifle generally requires very frequent use, sometimes every minute depending on your trade, to maintain a razor-sharp edge.
