When you buy a De BuyerMineral B frying pan or wok, you're choosing a kitchen and cooking utensil that will last a lifetime. That's why it's important to follow a few simple steps to ensure its durability. It all starts with the De Buyer culotte. Before using your De Buyer sauteuse or frying pan, pour in about 1cm of oil. Heat until the oil smokes slightly, then empty the oil into a container. Wipe the pan with a paper towel. Your De Buyer frying pan is now ready for use. This action develops its non-stick properties. To clean your De Buyer frying pan, deglaze it with hot water. This will loosen any food deposits that may have adhered. Rinse and dry immediately with a paper towel or clean cloth. Do not use dishwashing liquid, and do not put the steel pan in the dishwasher, as you risk the cullet disappearing. From time to time, purify the pan or wok by heating coarse salt for 1.5 minutes over high heat. Wipe with absorbent paper and oil before storing away from moisture.
