A SAUTÉ PAN IN THE KITCHEN: WHAT FOR?
If you're hesitating between a frying pan and a saucepan, you might want to consider a kitchen sauteuse! It has a large diameter like a frying pan, from 20 to 32 cm for the largest, and high sides like a saucepan. The sauteuse is therefore useful in all circumstances, since it can be used for a variety of purposes. Its high sides prevent splatters when searing meat, and allow you to simmer delicious dishes! As most professional saute pans are fitted with a lid, you can easily cook tomato sauce, blanquette de veau, lamb sauté... Finally, the saute pan is relatively advantageous when meat needs to be seared first and then simmered. As with all cooking utensils, be sure to choose a sauteuse that fits your hob. If you have an induction hob, then an induction sauteuse is the way to go!
HOW TO CHOOSE A SAUTÉ PAN?
As with all utensils, sauté pans come in a wide range of materials. But how do you choose the right material for the job? There are two main types of sauté pan: stainless steel and cast-iron. On the one hand, stainless steel is a durable, robust material with very high corrosion resistance. For this type of stainless steel sauté pan, you can opt for a Cristel or Bekasauté pan. Cast iron, on the other hand, is renowned for its high-end cooking performance. In fact, it distributes heat evenly for perfectly homogeneous cooking. The cast-iron sauteuse is a real asset to any kitchen, and will be with you for years to come! Finally, they come in different sizes to suit your needs. For example, a 20 cm sauteuse is suitable for small portions, a 24 cm sauteuse is ideal for 3 to 4 people, while a 28 cm sauteuse is perfect for cooking for up to 6 people!
