WHAT'S THE POINT OF A BAKING MAT?
Baking mats, also known as pastry mats or pastry cloths, ensure perfect baking of your preparations! More economical and more ecological, it's the zero-waste alternative to disposable baking paper. There are a number of different baking mats, the most widespread being silicone baking mats. Silicone baking mats are practical and can withstand temperature variations ranging from -70°C to +280°C. So it's perfectly suited to your needs. The flexibility of the silicone baking sheet is also one of its advantages, as you'll be able to unmold your preparations quickly and easily. The oven baking mat can be used for a wide range of applications, from savoury to sweet recipes. However, when working with sugar or nougatine, it's best to use the Silpat baking mat, which is the benchmark in baking mats!
HOW TO USE A BAKING MAT?
To make mignardises, cookies, financiers, muffins, tart dough... you need a baking mat ! The use of a baking mat is essential when you need to make recipes that require precision. This is the case with macaroons, for example: by using a macaroon baking mat with a non-stick matte surface, you'll have no trouble removing the shells without damaging them. What's more, these macaron baking mats generally have indentations to guide you and ensure perfectly even shells. In the same vein, graduated baking mats feature different markings: the edges have graduations and the center has several diameters to help you calibrate your dough to perfection.
