Cannelés are small cakes from Bordeaux flavored with rum and vanilla, originally baked in a copper cannelé mold, which gives them their fine caramelized crust. Today, cannelé molds come in a variety of formats, including silicone and non-stick. Their individual size means they can be eaten in a single bite! Note that cannelé can also be spelled canelé: this term was introduced around 1985 with the creation of a brotherhood in Bordeaux. Cannelé or canelé, although separated by an "n", there's no hatred between the two spellings - after all, the taste is the same!
