How to choose your saucepan

Saucepans are just as essential as frying pans! Whether you're making pasta like a true Italian, simmering a typical French dish or preparing a sauce, you're bound to have a saucepan in your home! Large or small, they come in all sizes, colors and materials.

Non-stick, copper, aluminum, cast-iron, induction, with a removable handle... There's an infinite number of saucepans, so how do you make the right choice? We'll help you choose!

Several criteria will be decisive:

- Your hotplates

- The material

- Your budget

The nature of your baking trays

Not all pans are suitable for all types of cooking. That's why when you buy a pan, you need to be very careful that it's compatible with the hobs you have at home!

For induction hobs: Pans will need to be magnetic to work, as these hobs heat with a magnetic field. So you'll need an induction pan.

For electric hobs: These plates heat more slowly and evenly than gas hobs, for example. We therefore recommend that you buy a stainless steel or aluminum pan with a non-stick coating.

For gas hobs: These are compatible with most types of pan. As an expert, we recommend copper, stainless steel, cast-iron or aluminum pans, which are perfect for gas hobs!

For glass-ceramic hobs: These plates heat evenly, but can cause damage to the utensil if they are not compatible. For these plates, stainless steel or aluminum pans are recommended to avoid damaging the pans or the plate.

Halogen cooktops: Like glass-ceramic cooktops, halogen cooktops can cause damage to your utensils, and may not retain their full brilliance if the wrong products are used. To avoid damaging your utensils, you'll need to choose between cast-iron or aluminum pans.

You need to check the compatibility between your hob and your future pan to make sure you don't make a mistake! Once you've done that, all you have to do is choose the size of your cookware and the material you feel most at home with.

The choice of material is essential because it's completely personal to you! You can choose a material with which you feel most comfortable (lighter, easier to clean, designer or with an interior coating...). But there are a few things you need to know, and we're going to explain them to you so that the subject of materials no longer holds any secrets for you!

Stainless steel saucepan: durable and corrosion-resistant. It can be used at high temperatures without problem, and is suitable for induction hobs. However, food may stick to it.

Cast-iron casserole: ideal for simmering tasty (or not so tasty) French dishes. It retains heat and has a natural non-stick surface when culted. For the uninitiated, culotting means rubbing a thin layer of vegetable oil on the inner surface of the pan and heating it over medium heat for 20 minutes. This creates a natural non-stick protective layer.

Aluminium saucepan: perhaps the most practical of all! Lightweight, easy to use, easy to wash and quick to heat. What's more, prices are often affordable. However, it can react with acidic foods unless it is anodized (surface treatment by anodic oxidation to protect it) and deform under high heat.

Copper saucepan: a beautiful vintage-style product with excellent thermal conductivity. This allows precise temperature control. However, the cost can be relatively high and it needs more regular maintenance to avoid oxidation and tarnishing. Like aluminum, copper is not compatible with induction hobs.

Now that you know the little secrets of all the materials, you can make your choice according to your cooking style and budget. In fact, cost and quality vary from one material to another.

Our tips:

- Hand wash and wipe dry. Dishwashing can damage the inner coating and cause food to stick.

- If you get burnt or greasy marks that don't come off when you wash by hand, you can clean with baking soda, which will restore the pan's youthful shine.
