Nakiri Japanese knives (vegetables)

The Nakiri knife is a Japanese knife designed almost exclusively for cutting vegetables and herbs. The Japanese have created a multitude of kitchen knives, each dedicated to a particular use. Thanks to its high blade, which closely resembles a cleaver/chopper, it enables very rapid vertical cutting of vegetables, in the manner of professional chefs. This vertical movement is much faster than the rocking motion of a chef's knife or santoku, saving the user considerable time. Finally, the high blade prevents the hand holding the handle from tapping the cutting board at the end of the cut, which can happen with some chef's or utility knives. The Nakiri Japanese knife has a rectangular shape and a 14 to 18 cm blade, making it perfect for slicing vegetables and herbs.
