USING THE NAKIRI KNIFE
The nakiri knife is specially designed for slicing vegetables and herbs. With it, you'll have no trouble slicing all types of fruit and vegetables (carrots, eggplants, zucchinis, peppers, mushrooms, apples, bananas...) or cutting them into slices, sticks or cubes. It is also very useful for chopping aromatic herbs such as chives, parsley, basil and so on. Last but not least, you can also use it to move food around, thanks to its wide, flat surface.
WHICH BRAND SHOULD I CHOOSE FOR MY NAKIRI?
The nakiri, like all knives on the market, is available from a large number of different brands. Sometimes it's hard to choose! The nakiri knife is primarily offered by Japanese brands such as Kai, with the Kai Wasabi Black range, for example, enabling you to purchase quality equipment at a reduced price. Then there are well-known brands such as MAC knives and Global knives, often seen on TV cooking shows! There are also some very fine nakiri knives: blacksmith Yu Kurosaki san, an expert at the famous Takefu Knife Village in Japan, puts his know-how into action to offer ever more efficient and ever more beautiful blades. His collection includes several nakiri models with different steels, woods and designs to meet the needs and tastes of everyone. Also worthy of note is the work of young blacksmith Yoshimi Kato san, whose technique and know-how have been passed on to him by renowned Japanese master blacksmiths. This blacksmith works extensively with damascened blades: choose a Yoshimi Kato knife if you want to add a damascened nakiri knife to your collection! Of course, nakiri knives have become increasingly popular throughout the world, and other manufacturers now offer this type of knife. This is particularly true of Wusthof, a German brand renowned for its high quality.
