THE CAST-IRON COCOTTE: A RESOURCEFUL UTENSIL
Cast-iron casseroles offer a host of advantages. Smooth, even cooking: cast-iron has the ability to store heat progressively before releasing it gently into your dish. As a result, your meats in sauce or vegetables are meltingly tender, preserving their natural flavor. Another advantage is that your food stays warm long after cooking. And thanks to its airtight lid, the cast-iron casserole is the queen of stewing. It retains all the vapors: a concentration of flavor for dishes with even more taste. Their durability is exemplary, even with minimum maintenance. In short, the cast-iron casserole is the durable and practical accessory par excellence, for meltingly tasty preparations!
HOW TO CLEAN AN ENAMELLED CAST-IRON COCOTTE?
First and foremost, we advise you to avoid using metal cutlery with enamelled cast-iron cocottes: it could damage the inside, and that would be a pity for your pretty cocotte ! Instead, use wooden or silicone utensils, which are often used in pastry-making. As for cleaning, most (if not all) cast-iron cocottes are now dishwasher-safe: quicker and more practical, but be careful! Enamelled cast iron is very easy to clean, so you can clean your cocotte directly with a sponge and a standard detergent. Depending on the use you've just made, you may find that a little material remains stuck to the bottom of your cocotte, but don't panic: leave it to soak in hot water and detergent, then rinse! For stubborn stains, baking soda can be a great alternative! In any case, even though your cocotte is extremely hard-wearing, it's important to take good care of it! That way, it'll be with you in the kitchen for decades to come.
