The different models of filet de sole knives
There are a large number of filet de sole knives available from various professional brands specializing in the fishmonger's trade. One of the most famous is the JapaneseFileting knife, because as you know, the Japanese are experts at cutting fresh fish, not least to prepare the famous sushi! Others, such as the SabatierFileting knife and the PradelFileting knife knife from France, are well known to industry professionals for their excellent value for money. You also have Swiss quality with the VictorinoxFileting knife knife and German precision with the WusthofFileting knife or the ZwillingFileting knife. The choice is yours!
Using the Fileting knife
Grab your favorite flexibleFileting knife and lift your fish fillets or slice your salmon with ease, using wide, continuous strokes thanks to its fine, supple blade. Although the Fileting knife is very similar to a boning knife, the difference lies in the finesse and flexibility of the blade, which allows the knife to bend to cut as close as possible to the skin. In this way, you retain as much flesh as possible, so as not to waste or damage the fish.
