How to choose the right wok?
There are many different woks on the market: different sizes, shapes and materials. Choosing the shape of your wok depends on the type of stove you have. Flat-bottomed woks are best suited to glass-ceramic or electric hobs, while round-bottomed woks are best used on a gas stove. You should also choose an induction wok for your induction hobs. The manual wok is much more practical than the electric wok, which must remain on its base. Choose the size of your wok according to the storage capacity of your kitchen. A wok often takes up space in your drawers.
How to use a wok?
A wok cooks very quickly. You need to take this into account, and pay attention to the order in which you put your food in your utensil. And to avoid overcooking certain foods, you need to have all your ingredients at hand: arrange them in ready-to-use bowls or plates. Organization is therefore essential for this type of cooking, whatever the recipe. Start by preheating the wok, to ensure even cooking. Add just a drizzle of oil and condiments such as garlic or dried fruit to flavour your food afterwards. Don't overheat the oil: it should be hot but not smoky. Add the foods that take the longest to cook first, often chicken, beef or shellfish. Remember that wok cooking requires little or no added fat: take advantage of it to eat healthily! And to prevent your meat from becoming too dry, you can flour it before cooking. The key to successful wok cooking is thorough mixing. The wok traditionally has two handles for this purpose, to shake up the food and ensure even, rapid cooking. For the less muscular: mix your ingredients with chopsticks. Don't hesitate to remove any well-cooked food from the bottom of the wok.
