Yoshimi Kato, or how the art of Japanese blacksmithing is passed on
The story of Yoshimi Kato is a beautiful one. In fact, it's a story that adds cachet to your Japanese knives, and a je-ne-sais-quoi that makes them even more precious. Originally, Kato San was not at all destined to work in the world of knives. It was when his father-in-law, a highly reputed blacksmith in Japan, offered to take over the family forge after his retirement, that he threw himself into this wonderful profession. Since 2013, Hiroshi Kato has been teaching all his techniques to his son-in-law, and Yoshimi has been contributing innovative ideas to renew the range. Kato knives are the result of a unique know-how that has been passed down from generation to generation, to bring you knives that perform even better!
Yoshimi Kato Japanese knives: choosing quality every day
Every Yoshimi Kato knife is handcrafted, with particular care taken at every stage of production. If we take the example of the VG10 Nickel Damascus knife, we can talk about its fully forged blade, i.e. built on a single piece of steel. This results in a stronger, more balanced knife. The knife is then cold-forged, which means it is forged at room temperature, giving it a clean shape, and the knife will not necessarily need a lengthy finishing process afterwards. The blade features a VG10 steel core, surrounded by 63 layers of folded steel. In the end, the Yoshimi Kato knife achieves a hardness of 60 HRC, enabling it to hold its edge for a long time. The handle is made of rosewood, a dark wood known for its resistance to humidity. The two parts of the knife fit together perfectly, creating a traditional design with a new damascus pattern.
