Financial mould

The financier is an institution in the world of pastry-making, so it's essential for all fans of the genre to have their own financiers mould. The financier is a pastry made from almond powder, in an elongated oval or rectangular shape. It's the perfect accompaniment to a cup of coffee or tea. Large or small, financiers can be used as desserts or mignardises. Originally, this small oval cake made with almonds and egg whites was produced and sold under the name of visitandine around the ^17th century in Nancy. Somewhat forgotten, it was finally revived at the end of the ^19th century when a pastry chef took up the recipe to offer his customers, who worked in finance, the chance to eat a cake without getting their fingers dirty. Eventually, it took on the name financier and adopted a rectangular shape in reference to a gold ingot! WHICH MOLD FOR FINANCIERS?

Financier molds come in the form of a financial plate with several cavities for baking up to 25 financiers in a single batch. Silicone, non-stick, tinplate? Which to choose? Each of these financial molds has its own advantages, but they must also meet your expectations and requirements. If demolding is a pain for you, then a tinplate financial mold is not the best choice. Tinplate needs to be suitably buttered and floured before use, otherwise the dough will stick to the sides and unmoulding will be a problem!
