WUSAKI KITCHEN KNIVES - FAQ

Still unsure which Wusaki knife is right for you? Here are answers to the most common questions.

Are Wusaki knives made in Japan?

Not all Wusaki knives are made in Japan. Wusaki offers a wide variety of collections manufactured in different locations, depending on the steel, construction and price range. Some of its more specialised ranges are handcrafted in Japan, such as Nakata BS2 and Nogami BS2, made using Aogami #2 carbon steel, or Yaketa VG10, made in Japan by Tsunehisa. These collections showcase traditional Japanese expertise, while other Wusaki ranges offer more accessible alternatives for everyday cooking.

Which Wusaki knife collection should I choose?

It mainly depends on your budget, cooking habits and the level of performance you are looking for. Pakka X50 is an accessible and easy-to-maintain choice for everyday use, while the Fujiko Black 10CR, Damascus 10CR and Sakin Damascus 10CR collections offer harder steels and more elaborate finishes. Experienced users looking for Japanese craftsmanship can turn to ranges such as Nakata BS2, Nogami BS2 or Yaketa VG10, while Wusaki also offers specialised Japanese collections using steels such as SLD, Ginsan, AUS10 and Blue Steel.

What steel do Wusaki knives use?

Wusaki uses a wide variety of steels, allowing each collection to offer different levels of hardness, edge retention and ease of maintenance. These include X50CrMoV15, 10Cr15CoMoV, VG10, AUS10, SLD, Ginsan (Silver #3) and Japanese carbon steels such as Aogami #2 (Blue Steel #2). Some blades feature Damascus or San Mai constructions, combining a hard cutting core with additional steel layers. This diversity makes it possible to choose between easy everyday maintenance and the sharper, harder blades sought by experienced users.

Are Wusaki knives good for beginners?

Yes. Wusaki offers collections suitable for both beginners and experienced cooks. For a first quality kitchen knife, ranges such as Pakka X50 provide a good balance between cutting performance, durability and easy maintenance. More technical collections using harder steels, such as VG10, SLD, Ginsan or Aogami, are aimed at users looking for greater sharpness and edge retention. Carbon-steel ranges such as Nakata BS2 and Nogami BS2 require more careful maintenance and are therefore better suited to users ready to take proper care of their knife.

How should I care for a Wusaki knife?

A Wusaki kitchen knife should generally be washed by hand with a soft sponge and mild detergent, then dried immediately. Avoid the dishwasher and prolonged soaking, particularly with wooden handles or carbon-steel blades. Use a wooden or soft cutting board rather than glass, stone or ceramic, which can damage the edge. For sharpening, a suitable sharpening stone is recommended for maintaining a fine edge. Extra care is required for Aogami carbon-steel knives, as the exposed carbon-steel edge can react with moisture and naturally develop a patina over time.
