These knives are handcrafted in Japan's Niigata province by the renowned Tadafusa cutlery maker. The craftsmen use techniques inculcated by the ancient blacksmiths who created katanas, those traditional swords with legendary sharpness! The heart of their blade is made of Blue Steel n°2, named after the blue paper in which it is packaged. It contains a high carbon content (1.2% vs. 0.5% to 1% on average for European and Japanese steels), enabling the blade to reach an extreme hardness of 62-63HRC. This level of hardness makes the cutting edge incredibly fine, for unrivalled cutting precision. This core is wrapped in a layer of mildstainless steel to make it less brittle and protect it from corrosion. The latter has a Nashiji (rough forged) finish, giving the blade a black color and a hammered effect. The handle is made of walnut, a rare wood normally used for luxury objects.
