Gyuto Japanese knives (Chef)

Gyuto knives are the equivalent of European chef's knives. These knives feature blades whose shape and dimensions enable them to slice and mince all types of food. The gyuto hocho is therefore a multi-purpose knife! We offer knives with different blade sizes ranging from 15cm to 27cm. The angle of the sharpening edge is less important than on a Western chef's knife (the latter has an angle of 20 to 22°, compared with 15 to 18° for the Japanese), which requires a harder steel than industrial steel. This process is called San-Maï or Ni-Maï (3 superimposed layers). The blade of a Japanese gyuto knife is also flatter than that of a chef's knife.
