Yoshihiro is a Japanese manufacturer established over a hundred years ago. His aim is to offer you high-performance kitchen knives that will stand you in good stead for many years to come. The craftsmen who make the knives are the descendants of highly skilled blacksmiths, who themselves produced the swords of the warriors of the time (the know-how could be traced back to the 14th century). Little by little, the techniques used to create swords were transferred to cutlery, which is why Japanese knives are so sharp!
The manufacturer's motto is: 一期一会. This could be translated as "every moment is a once-in-a-lifetime opportunity". That's why the brand strives to offer durable knives whose performance will delight you for years to come, so you can enjoy every moment in the kitchen!
This chef's knife features a blade made from powder-metallurgy steel, SRS15 (known for being hard to forge). Powder metallurgy steel is created by grinding metal particles, gradually adding other elements to complete the alloy. The whole is then compacted using hydraulic presses, and the result is sintered (with the addition of a high-temperature heat treatment) to consolidate the whole. The result is a steel with a more homogeneous composition. Among other things, SRS15 contains around 1.5% carbon, 13% chromium and 1.25% tungsten: a competitive composition. The end result offers excellent wear resistance.
The steel achieves a hardness of around 63 HRC on the Rockwell scale, which makes it stiffer. A rigid blade can be sharply sharpened, and this is the case with this Yoshihiro knife. The blade is ultra-sharp, and you'll feel it from the very first use. You'll need to sharpen it with a Sharpening stone.
Last but not least, the brand's logo has been applied to the cutting surface for added authenticity.
The full-silk blade extends to the end of the handle, itself made of laminated black wood. This soft material is pleasant to the touch and resistant to temperature variations and humidity. It is completed by 3 stainless steel rivets, which hold the wood together with the steel of the tang.
With this knife, you're choosing a timeless model that will last a lifetime!
Wash the knife by hand and wipe with a soft cloth immediately afterwards for careful, gentle care. This will help to preserve it over the long term, since it is enriched with carbon, which is oxidizable.
The knife is available in 3 different sizes.
