AU SABOT is one of France's oldest cutlery brands, renowned for its regional knives. Knives from this French manufacturer are praised for their cutting quality and durability.

Featuring an XC75 carbon steel blade, this Le LANGRES 9cm knife is distinguished by its high hardness, which stands at 60HRC on the Rockwell scale. This blade is harder than average, and its sharpness is prolonged. Suitable for both indoor and outdoor use, it can be used for a wide range of cutting applications.

It's important to note that a carbon blade is sensitive to oxidation. In fact, it should be cleaned by hand, then wiped down directly with a soft cloth. You can also oil it from time to time with mineral oil, to protect it. It should be noted that, despite careful maintenance, a carbon blade may change color over time (notably due to the acidity of the food being cut, or the humidity in the air).

Its opening system is called Nail Nick. It allows you to open the knife quickly with your fingernail, thanks to the notch at the end of the blade.

The handle is decorated with rhodoid. This material is non-combustible. As for its design, its pure ivory color makes it very refined.
