With the M'Héritage stainless steel copper rondeau, Mauviel opens up a whole new world of recipe possibilities for professionals!
The round shape and slightly high, vertical sides of the rondeau are distinctive. It lets you prepare the same dishes as in a sauté pan, i.e. sauté or deglaze, but with an extra lid to prevent spillage.
We offer this rondeau in 2 sizes:

The rondeau is designed with two folds. Its outer ply is made of copper, one of the best heat conductors after silver. It distributes heat evenly and rapidly throughout the rondeau, guaranteeing perfectly even cooking. Copper is also an extremely durable material.
The inside of the rondeau is made of 18/10 stainless steel. This ensures excellent food hygiene for the rondeau, as well as easy daily maintenance.
The bottom of the rondeau is 2mm thick. This thickness is ideal for professional use, as it ensures gentle, even heat distribution throughout the utensil, for optimum cooking results.
The rondeau can be used on all heat sources except induction. The practical rondeau is also oven-compatible, enabling you to finish cooking or reheat a preparation before serving.
The rondeau comes with a copper lid. This is useful for preventing overflow during deglazing, but also for keeping your preparation warm while you place it on the dining table.
This rondeau and its lid are also fitted with riveted bronze handles, making it a very elegant utensil for table service. Handling the rondeau is a safe and secure operation.

Care and maintenance
When cooking, it's important not to exceed two-thirds of your hob's heating power, otherwise the bottom of the rondeau will warp. Avoid overheating, and use only wooden or silicone mixing and serving utensils to avoid scratching the rondeau.
To clean the rondeau, simply hand-wash it with washing-up liquid and a soft sponge. Never use chlorine or abrasive detergents that would leave indelible marks on the rondeau.
In contact with heat, your rondeau will change color. This is a natural phenomenon, but if you wish to revive the shine of copper, you can apply a little Copperbrill maintenance paste to the rondeau.
