The Ambrogio Sanelli Supra knife is the ideal choice for professional chefs. Its blade is made of Nitro B stainless steel, enriched with 0.1% nitrogen, giving it a hardness comparable to that obtained with the addition of carbon. The composition of the blade also includes 0.5% carbon for hardness, 14.5% chromium for improved corrosion resistance, and elements such as vanadium and molybdenum, which further enhance these characteristics. This blade is available in 14cm and 16cm sizes.
To ensure the quality of each knife, various tests are carried out. Blade hardness is checked to verify the effectiveness of the heat treatment, which influences cutting capacity, corrosion resistance and food safety. Blade roughness is also examined to ensure that the PEAK (semi-polishing) treatment delivers a smooth cut and enhanced corrosion resistance. A corrosion test is carried out by immersing the knife in a tank to detect any oxidative spots. Next, thecutting angle and edge are thoroughly inspected.
The handle is made of SEBS elastomer. It is perfectly resistant to acids, temperature variations and shocks, and is enriched with an antibacterial agent. What's more, its non-slip surface ensures a secure, comfortable grip. The design of the handle with its smooth-edged guard facilitates cleaning, preventing the accumulation of food residues.
