Its stainless steel blade is enriched with chromium and molybdenum, an advantage in the fight against corrosion. To improve cutting performance, the blade is vacuum-hardened using an ultra-modern process. Cleaning is facilitated by mirror polishing. This technique prevents rust from becoming embedded.Each blade is grinded, then a master sharpener finishes the knife by hand, for an exceptional finish.
With its relative flexibility, this alloy is not afraid of shocks, so it's once again ideally suited to the needs of professional chefs! Its hardness of 56 HRC makes the blade easy to sharpen on a daily basis using a sharpening gun.
