Even high-quality knives like those from Wüsthof need care. By choosing the Wüsthof Classic Ikon 3040385026, you are acquiring a top-of-the-range product! It's made by the German brand Wusthof, whose reputation for quality is well established!
Use a sharpening steel to keep your knives sharp! The Wüsthof Classic Ikon standard grain sharpening steel is a 26cm stainless steel sharpening steel made from a single piece of steel. The handle is connected to the bit by three rivets, also made of stainless steel.
When sharpening steel knives, it's crucial to use a good quality sharpening steel. A standard-cut whetstone is recommended for sharpening blades that are slightly dull, but have not completely lost their edge. However, if your knives are too dull, we recommend using a diamond or ceramic sharpening steel to restore their cutting edge.
Also, when choosing a sharpening steel, it's very important to make sure it's the right size. As a general rule, the length of the wick should correspond to that of the longest knife you wish to sharpen. It is therefore advisable to consider the future purchase of an extra-long chef's knife.
A few back-and-forth strokes on either side of the knife are all it takes to keep the blade sharp. Passing your knife over this sharpening gun, you move the microscopic metal particles back into place without removing the material. In short, the sharpening gun corrects the burr that forms with regular use. This distinguishes it from the sharpener, which removes the material.
Maintaining a whetstone is very simple. As it wears, its surface can darken. However, it is easy to clean using a paper towel and a little olive or sunflower oil. The handle is also easy to clean.
Our advice: fordaily maintenance, use a low-abrasive steel sharpening steel. For more extensive sharpening (in the case of very dull blades), opt for a more abrasive ceramic or diamond sharpening steel.
