The Gohan range of rice cookers has been designed with a clever blend of tradition and modernity. In Japan, the ancestral method of cooking is called "gohan", which led to the name of the range. Originally, rice was cooked slowly and evenly in a "hagama", a small clay or ceramic pot.
This Staub casserole is made from enamelled cast iron, a natural material that ensures excellent heat conduction. This conduction is progressive and uniform. The cocotte's enamel coating, called Black Matt, is highly resistant to wear and tear, and preserves your cocotte for a long time. In addition, it prevents rice from sticking to the bottom and sides of the cocotte, guaranteeing optimal cooking.
To recreate the principle of traditional rice cooking, this cocotte features a drop-shaped picot lid. This structure, called Chistera Drop, allows condensation water to concentrate and be redistributed evenly over the rice. The rice is continuously watered during cooking, and the structure reinforces the action of the enamel coating.
