Description

The Deba Kai Seki Magoroku Kinju is a typically Japanese knife. Its one-sided cutting edge can be used to cut flesh (for tartare, for example), while its heavy, thick side (as you can see on the top of the blade) can be used to cut fish with bones (it can be used with more force than a standard knife, given its thickness).

Available in 4 blade sizes: 10.5, 15, 16.5 and 18cm:

The blade is made of 1K6 stainless steel, a tough alloy enriched with molybdenum and vanadium and containing 0.8% carbon. As a result, the alloy achieves a hardness of 58 HRC on the Rockwell scale, providing a good balance between edge retention and ease of sharpening. Last but not least, its mirror-polished finish lends it a touch of elegance.

The one-sided cutting edge is suitable for right-handed cooks.

The handle is made of Pakkawood, a lightweight composite material combining laminated wood and resin, all heat-compressed. The whole is resistant to both thermal and mechanical shock. It is also moisture-resistant, an asset in the kitchen. Its original 6-sided shape fits perfectly into your palm (the top is rounded, while the bottom has ridges).

We recommend hand-washing, which is gentler on the knife over the long term, to preserve its appearance.
