Winner of the Red Dot Award 2025, the Shun Kagerou range embodies the excellence and refinement of high-end Japanese knives.
This Shun Kagerou Japanese santoku knife is the ally of enthusiasts and professionals alike: its high, perfectly balanced blade enables fast, clean cuts, with exceptional ease of use. It is a must-have for any kitchen that values performance and elegance.
A high-performance Japanese blade
Measuring 18cm in length, the blade is made from Dual Core, a combination of two high-quality stainless steels: VG2, renowned for its flexibility and strength, and VG10, renowned for its hardness and ability to maintain a long-lasting cutting edge. This combination of steels is made possible by Composite Blade Technology, which fuses these steels with exceptional precision, giving the blade both performance and aesthetic appeal. The result is a blade with a hardness of around 61 HRC, guaranteeing cutting finesse and durability.
The fusion of the steels creates a 71-layer damascus pattern visible on the lower part of the blade, creating elegant patterns reminiscent of rising flames. The upper part is mirror-polished, with a copper edging that subtly emphasizes the demarcation with the damascus zone. Finally, the Shun logo, affixed to the blade and engraved on the base of the handle, marks its belonging to a luxury range.
A refined, ergonomic handle
The knife's 12.5cm handle is made from mottled grey pakka wood. This composite material is known for its resistance to humidity and temperature variations. The handle is cut in a symmetrical U-shape, exclusive to the Shun Kagerou range, for optimum grip comfort, whether you're right- or left-handed.
The forged base and bolster are made of stainless steel, providing balance and stability to the knife and guaranteeing perfect control in every gesture. Combining elegance, comfort and solidity, this handle makes the santoku a kitchen tool as aesthetic as it is effective.
