An exceptional Japanese knife by Kai
Immerse yourself in the world of Japanese high-end with the prestigious Kai 15cm Shun Kagerou universal knife. This refined model, awarded the Red Dot Award 2025, embodies Japanese excellence, where cutting performance, sophisticated design and ergonomics meet. Made in Japan, this Shun Kagerou Japanese knife is the ideal companion for those who seek surgical precision in their daily work.
This all-purpose knife is designed for versatile use. It excels in all fine cuts of vegetables, fruit and boneless meat. Its short, nimble blade allows precise, fast and comfortable handling, while ensuring excellent control. It's a must-have for any kitchen that values technique as much as aesthetics.
An innovative blade design
The heart of this Shun Kagerou Japanese knife lies in its 15cm Dual Core blade. This is a unique alloy of 2 top-of-the-range stainless steels: VG2, known for its flexibility and strength, and VG10, renowned for its high hardness. The combination of these two steels gives the blade a hardness of around 61 HRC, guaranteeing an exceptional cutting edge and long-lasting cutting performance, even in intensive use. This structure is made possible by Composite Blade Technology, which gives the blade both performance and durability.
The 71-layer damascus effect of the two steels is visible on the underside of the blade, along the cutting edge. It evokes the heat currents rising above the flames. In addition to its aesthetic appeal, this damascus symbolizes the intensity and mastery required to design this jewel.
In addition, the upper part of the blade is mirror-polished, and a copper edging subtly emphasizes the demarcation with the damascus. The visual contrast is striking, and the Shun logo is affixed to the blade to complete the luxurious design.
Exclusive handle shape
The 10.5 cm handle is made from mottled grey Pakkawood. This technical material is resistant to humidity and temperature variations. Its symmetrical U-shape, exclusive to the Shun Kagerou range, offers optimum grip for both right- and left-handed users. The knife's ergonomics have been thought through to the smallest detail, offering excellent stability and comfort when cutting.
The forged base and bolster, both in stainless steel, ensure a perfect balance between blade and handle, for ideal handling and safety. Every element of this all-purpose knife has been designed to meet the demands of the most discerning chefs and passionate amateurs alike. The Shun logo has also been engraved on the base of the knife, reinforcing its identity.
