This 21cm butcher knife offers incredible cutting quality. The stainless steel used in its manufacture has been tempered (i.e. heated and then rapidly cooled), giving it tenfold hardness and flexibility.
As a result, the blade achieves a strength of 55 to 58 HRC on the Rockwell scale. It will also be much better protected against corrosion and acid attacks from food. In addition, its cutting angle has been laser-controlled, to guarantee excellent sharpness.
