The Fukito Desert Damascus kiritsuke is a versatile knife designed for a wide variety of kitchen tasks. It is ideal for vegetables, boneless meat, fish and aromatic herbs such as parsley and coriander. Its distinctive point gives it a strong visual identity, while offering great precision for fine cuts. However, we recommend avoiding foods that are too hard, such as bones or frozen products, in order to preserve the blade.

Made in Western China, in the Guangdong province, this knife benefits from the know-how of a region historically renowned for the production of cutting tools. Each Fukito knife is designed using techniques and materials that meet the manufacturing standards of the professional food industry.

A balanced, high-performance damascus blade

The blade of the Fukito Desert Damascus kiritsuke is built on a damascened structure, resulting from the layering of different steels, including stainless and nickel steels. This alternation of layers creates a marked visual contrast, with beautiful undulating waves visible across the entire cutting surface. Damascus not only looks good, it also plays an important role in the overall balance of the blade.

At the heart of this structure is a core of 10Cr15CoMoV stainless steel, an alloy very similar in performance to VG10 steel. Its carbon content of around 1.05% ensures excellent cutting edge rigidity and long-lasting edge retention, with a hardness of around 60 HRC on the Rockwell scale. Chromium, present at around 15.5%, enhances corrosion resistance, which is essential for regular use in the kitchen.

This core is then surrounded by layers of stainless steel and nickel steel, which balance the blade and enable it to more effectively absorb the micro-shocks associated with repeated cutting. Depending on the angle and the light, the logo on the blade can appear more or less distinct, reinforcing the knife's unique character.

A handle combining G10 and ironwood

The handle of the Fukito Desert Damascus kiritsuke combines G10 and ironwood, two materials with complementary properties. Fine gold edging highlights the transition between these elements and highlights their respective hues, reinforcing the knife's meticulous aesthetic.

G10 is a synthetic material renowned for its durability, hardness and stability. Composed of resin-impregnated glass fibers, compressed and then hardened after firing, it offers excellent resistance to humidity and temperature variations. On this model, G10 forms the black parts of the handle, located at the bolster and base.

The central part of the handle is made of ironwood from the Arizona desert. This dense, very hard wood is distinguished by its naturally dark hue, punctuated by lighter veins that provide contrast. Each handle has its own unique grain, as wood is a living material. The result is a handle that is robust, well-balanced and pleasant to use.

The octagonal shape of the handle adds further originality. Elongated and contoured, it offers eight distinct sides for a stable, comfortable grip. This design is equally suited to right- and left-handed cooks, and ensures good control of the knife when cutting.

A versatile knife with an assertive design

The Fukito Desert Damascus kiritsuke knife is an excellent choice for those seeking a versatile, high-performance tool with a strong visual personality. Its damascus blade with technical core provides a precise, long-lasting cut, while its G10 and ironwood handle ensures comfort, stability and balance. It fits perfectly into everyday kitchens as well as more demanding equipment.

The knife comes in a gift box for safe storage or as a thoughtful gift. To preserve its qualities, we recommend washing the knife exclusively by hand, without soaking it or putting it through the dishwasher. After washing, wipe carefully with a soft cloth before storing in a dry place.
