Fukito knives combine the practical with the pleasurable. They're high-performance, thanks to the quality materials they're made of, ergonomic and aesthetically pleasing.
The Fukito Desert Damascus kiristuke chef's knife enables you to cut many types of food, from vegetables to meat and fish, or even herbs such as parsley or coriander. In fact, it's extremely versatile, as long as you don't use it on food that's too hard (bones, frozen food...). Its original tip makes it resemble a traditional sword.
The blade is damascened, a blend of stainless steel and nickel steel (which creates the color contrast between the different layers visible on the blade). Damascus has a real impact on the blade's balance, as the different layers of steel are complementary, giving the blade a good ratio between hardness and flexibility (not in the pure sense of "flexible", but by this we mean that the knife will better absorb the waves created by small shocks). In addition to this balance, damascus also provides a superb effect across the entire cutting surface. Here, curved waves are visible, for even greater originality. Note that the blade logo becomes more or less visible depending on angle and light.
At the heart of this damascus blade is 10Cr15CoMoV stainless steel, which is very similar to VG10 steel. Like VG10, it has a high chromium and carbon content, which enhances its capabilities.
Its carbon content (1.05%) improves the steel's rigidity, so that it holds its edge longer. This results in a hardness of +-60HRC on the Rockwell scale. Chromium (15.5%) improves corrosion resistance, among other things. This is important for a part that comes into contact with humidity, as is often the case in the kitchen.
This core is then surrounded by stainless steel and nickel steel, giving it contrast.
The handle is another feature of this knife. It blends G10 and wood. Attractive gold edging reveals the colors of these two elements.
To go into more detail, we can say that G10 is a synthetic material renowned for its durability and hardness. It's composed of tempered fiberglass and resin: the whole is compressed and hardened after firing. G10 has the advantage of being durable, resistant and lightweight. It forms the black part visible on the handle, serving as Bolster and base.
The central part of the handle is made of ironwood from the Arizona desert. Its color is naturally dark, with nice contrasting lighter touches. Its grain is well defined, and each grain is unique: wood being a living material, no two handles will be the same! It's a dense wood, and as its name suggests, very hard (a reference to iron).
The handle has an original octagonal shape that suits both right- and left-handed cooks. In addition to having 8 different angles, the octagon that represents its handle is full-length, with an unusual streamlined effect.
The knife comes in a magnetic case, so you can store it when not in use, or give it as a gift to a passionate cook.
For proper care, wash the knife by hand, without soaking it in the sink or putting it in the dishwasher. Once you've washed it, wipe it dry with a soft cloth, then put it away.
To find out a little more, Fukito knives are made in Western China, in the province of Guangdong. For decades, this place has been historically linked to knife production. Each Fukito knife is designed using techniques and materials that meet the manufacturing standards of French food industry professionals.
