An artisanal model embodying Japanese know-how: hand-forged by Kanetsugu in the legendary town of Seki, cradle of Japanese cutlers for centuries. Each knife is crafted using ancestral techniques, combined with high-quality materials to guarantee exceptional cutting performance and outstanding longevity.

A hand-forged blade for optimum performance
The Santoku Yuzo Tsuchime VG10 knife is manufactured with a San Maï structure, consisting of three distinct layers of steel. The central core is made from top-grade VG10 steel, produced by the renowned Hitachi steelworks. This material is enriched with carbon (1.2%), giving it a hardness of 60 HRC on the Rockwell scale. This material provides a sharp, durable cutting edge, ideal for clean, precise cuts.
Around this rigid core, a layer of soft iron is added to enhance flexibility and reduce the risk of breakage. This combination ensures smooth cutting, even during the most demanding cutting tasks.
The hand-applied Tsuchime hammering process not only improves grip by preventing food from sticking to the blade, but also brings a unique design to each knife. Each blade has its own distinctive pattern, making each knife one-of-a-kind.
A rosewood handle for exceptional comfort
The handle of the Santoku Yuzo Tsuchime VG10 knife is crafted from rosewood, a premium exotic species renowned for its beauty and strength. The wood is carefully sanded for a soft, pleasant feel. Each knife features unique veins, making each model distinct and precious.
The handle is completed by a quince wood bolster and a fine white ring, adding a touch of elegance. What's more, the octagonal shape of the handle provides an ergonomic and comfortable grip for both right- and left-handed users, ensuring easy handling even during prolonged cutting tasks.
Care and maintenance to preserve beauty and performance
To maintain the beauty and performance of your Yuzo Tsuchime VG10 Santoku knife, it's essential to follow a few care recommendations. Wash it by hand under lukewarm water with a mild soap, then dry it immediately with a clean cloth to remove all traces of moisture. Avoid soaking the knife in the sink or putting it through the dishwasher.
The blade can be lightly oiled on receipt to protect it. To prevent oxidation, we recommend wiping the blade with a soft cloth soaked in mineral oil from time to time. As the wood of the handle is sensitive to humidity, take care not to get it too wet, and dry it thoroughly after each use.
By taking good care of your knife, you guarantee its longevity and performance for many years of use.
