The core of the blade is made from VGMAX steel, an alloy developed by Kai from VG10. It has a high carbon content of around 1%, combined with cobalt, chromium and vanadium. This composition enables a hardness of around 61 HRC on the Rockwell scale, guaranteeing excellent edge retention and enhanced corrosion resistance.

Each blade is then hand-sharpened to a convex edge, a geometry inspired by Japanese swords, ensuring clean penetration of food and cutting without crushing fibers.
