The De Buyer Elastomoule fluting mould makes it easy to make pretty Bordeaux-style flutes!
French company De Buyeris renowned for its top-of-the-range Utensils, Frying panand kitchen Utensils that meet the exacting demands of professionals. With its Elastomoule fluted mold, it applies these requirements to a utensil suitable for both professional and private use.
The fluted mold is made from high-quality silicone foam. Silicone is renowned for making it easy to remove cakes from the mold, while at the same time being an excellent heat conductor. This silicone foam is embellished with metal powder, enabling the mold to conduct heat even better and withstand temperatures ranging from -70°C to +300°C. This means you can bake your mold in the oven or bain-marie, or freeze it if necessary.
During baking, the juices caramelize. As the heat is transmitted ideally, cooking is rapid and the result is similar to baking in a traditional tinned copper mould. The cannelés are golden and crisp on the outside, yet soft and melt-in-the-mouth on the inside. The main difference is that by using the Elastomoule mold you save a considerable amount of time, because you can bake a large quantity of cannelés in a very short time!
The mold is available in 2 sizes:
- 6 impressions: impression size: 5.5 x 5 cm; plate size: 21 x 17.6 cm; weight: 170g
- 8 impressions: impression size: 5.5 x 5 cm; plate size: 30 x 17.6 cm; weight: 300g
Recommendations for use: we recommend that you grease your mold before first use, place it on a griddle or perforated baking tray for optimal baking, and avoid using sharp objects that could damage the quality of your mold.
You can wash your mold in the dishwasher, but it's best to wash it by hand and dry it thoroughly. A recipe sheet prepared by 7 MOF and/or world pastry champions is included!
