The De Buyer copper cannelé mould will help you make your homemade cannelés!
Since 1830, the French company De Buyer has specialized in kitchen Utensils and pastry-making Utensils for professionals in the culinary arts and for private enthusiasts.
This fluted mold is made entirely of tin-plated copper. Tinned means that a layer of tin is applied to the inside of the mold. Copper, a material known for its excellent heat diffusion, ensures perfect baking results. As the heat is distributed evenly and efficiently throughout the mold, the juices caramelize perfectly, resulting in consistently successful, delicious-tasting cannelés!
The shape of the De Buyer cannelé mould, and above all its copper construction, make it a traditional mould, and ensure that you get the most traditional baking results too! In terms of characteristics, this mold measures 5.5cm in diameter by 5cm in height, and weighs 50g. Its high weight is a guarantee of quality, a feature that applies to all copper Utensils.
All that's left to do is place your cannelés in the oven. This should not exceed 230°C, as this is the melting point of tin.
For professionals, this fluted mold is perfectly suited to intensive use, as the layer of tin inside the mold is thick enough for long-lasting use.
It's important to know that the reaction between salted foods and copper can be dangerous! To prevent any direct contact between them, it is necessary to tin the utensil, i.e. apply a layer of tin to protect the copper. Tinning must be repeated when copper reappears. Note that only savoury foods are concerned, as sweet foods have no fear of contact with copper!
The maintenance of this fluted mold is rigorous and particular. Retinning, i.e. reapplying a layer of tin, must be carried out whenever necessary. As for cleaning, the tinned inner surface should be hand-washed with a non-abrasive sponge, and the outside should be cleaned with a special copper polishing paste. Do not use dishwashers or microwaves. By taking good care of your molds, they will preserve all their efficiency and durability!
The copper cannelé mold is the ideal mold for authentic cannelés that will perfectly accompany your coffee or tea at snack time! Available in two other sizes: Ø35mm and Ø45mm.
