De Buyer, a company in business since 1830, specializes in kitchen and pastry Utensils for professionals and individuals.
This fluted mould is made from tinned copper. Copper is a material known for its perfect heat diffusion, leading to excellent baking results. In fact, thanks to copper, heat is distributed evenly and efficiently to guarantee perfect caramelization of juices and a delicious taste! As for the term tin-plated, it means that a layer of tin covers the inside of the mold.
Traditional in shape and material, the De Buyer cannelé mold is sure to produce perfect Bordeaux-style cannelés! The mold measures 3.5cm in diameter and 3.3cm in height. Its weight of 10g per mold ensures the utensil's high quality.
It can easily be used in the oven to bake your cannelés. However, it should not be heated above 230°C, which corresponds to the melting point of tin.
It is also suitable for professional use, thanks to the thick layer of tin inside.
Note that the reaction between salted food and copper can be dangerous, and to avoid any direct contact between them, it is necessary to tin the utensil. Tinning involves applying a layer of tin to protect the copper. This operation must be repeated each time copper reappears. This only applies to savoury foods, as sweet foods have no fear of contact with copper!
This fluted mold therefore requires special care, and retinning is part of this, i.e. reapplying a layer of tin when necessary. To preserve the tinned interior surface, the mold must be cleaned by hand with a non-abrasive sponge. The outside should be cleaned with a special copper polishing paste. Do not use the dishwasher or microwave.
The copper cannelé mold is the best choice for perfect cannelés! Available in two other sizes: Ø45mm and Ø55mm.
