The deba knife is a Japanese model used for fish preparation. Its thick blade enables you to cut through fish bones with ease. You can use it on salmon, sea bream or sole! Be careful not to use it on hard foods such as frozen foods.

The blade of your Japanese knife is made of top-quality Swedish steel enriched with carbon for optimum efficiency! On the Rockwell scale, the blade's hardness is 60HRC, for excellent edge retention and cutting performance.

This durable edge is easy to maintain with a whetstone when necessary.

Your blade features an asymmetrically angled cutting edge for better penetration of your fish, guaranteeing precise, clean cuts.

The blade has been polished for a touch of elegance and features the Misono brand logo for added authenticity. It is available in different sizes to suit your needs: 16.5cm or 21cm.

A handle to suit all cooks

This Japanese kitchen knife features a handle made from black pakkawood, a composite material that is durable and strong. This material is made from laminated wood and resin, all hot-pressed together. It offers you the advantages of composite while retaining a natural look thanks to its wood grain pattern. What's more, this handle is antibacterial and moisture-resistant.

With its Western shape, this handle is practical because it fits the hands of all cooks! Its ergonomic shape ensures a comfortable, secure grip, even when used for long periods in the kitchen.

For added reliability, this Misono knife features 3 rivets that secure the handle to the full tang blade. It also features a bolster linking the handle to the blade for optimum balance.

To care for your carbon knife, it should be washed only by hand with a sponge and mild detergent. Once cleaned, you should dry it immediately with a clean cloth to remove all traces of moisture and store it in a dry place. Do not use the dishwasher or leave it to soak in the sink.

With the passage of time, the color of your blade may vary slightly: this is normal! This is a natural carbon reaction caused by the acidity of food and the humidity in the air, and in no way affects the use of your Japanese deba knife.
