Misono is currently recognized as the oldest manufacturer of Western-style knives in Japan. With a team of around fifty experts, they produce 150,000 knives every year. Misono takes charge of the entire manufacturing process for its knives, from the design of the blade to that of the handle!
Founded in 1935, the company uses the techniques of Japanese master blacksmiths, with several stages of production carried out by hand by their experts. Originally specializing in blades for kitchen peelers, the family business diversified in the 1960s to include the manufacture of kitchen knives. Today, Misono knives are prized the world over, and are enthusiastically used by top chefs!
The paring knife is a versatile tool for many cuts! With its small blade, you can easily make small cuts requiring precision. You can use it on a wide range of foods such as fruit, vegetables or pieces of meat. Be careful not to use it on too hard foods such as bones, squash, frozen foods, etc.
This knife features a blade made of high-quality Swedish steel. This alloy contains a high carbon content to guarantee optimum performance! As a result, your blade reaches a hardness of 60HRC on the Rockwell scale, offering excellent edge retention for efficient cutting.
This Japanese kitchen knife offers a long-lasting edge that can be easily maintained with a whetstone when the need arises.
This blade features an asymmetrical cutting edge for optimal food penetration when cutting.
What's more, the blade has been polished and features the Misono logo on its cutting surface for an added touch of authenticity.
The handle of this Japanese paring knife is made of black pakkawood, a robust and durable composite material. This material is made from resin and laminated wood, all hot-pressed together. So you get all the benefits of composite with the visual appeal of wood, thanks to its natural grain pattern. It's an antibacterial material that resists moisture well.
The handle is shaped to fit the hands of all cooks! Practical, it ensures an ergonomic grip for comfort of use, particularly during prolonged use in the kitchen.
It also features 2 rivets that secure the handle to the full tang blade for added reliability. The handle is completed by a bolster that links the handle to the blade, while balancing your Misono knife.
To care for your carbon knife, it's essential to wash it by hand only, using a sponge and a mild detergent. Once washed, wipe dry immediately to remove all traces of moisture and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
Over time, the color of your knife may change slightly: this is normal! This is a natural carbon reaction caused by the acidity of the food you're cutting and the humidity in the air. This in no way affects the use of your Misono knife!
