The Misono 440 24cm Japanese chef knife is the ideal knife for professionals, combining performance, strength and durability!
The 440 range from Misono is named after the alloy used: 440C stainless steel. Closely resembling VG10, this grade of steel boasts some very interesting properties: first of all, it offers excellent resistance to corrosion thanks to its molybdenum and chromium enrichment. This characteristic makes it particularly popular in the professional culinary sector.
The knife has a hardness of 58/59 HRC on the Rockwell scale, giving it a long-lasting, effective cutting edge. It should be noted that sharpening may take a little longer due to the chromium that protects it from oxidation.
The 21cm blade has an asymmetrical, but not unilateral, cutting angle. The blade penetrates flesh delicately and precisely without damaging your food.
Brand logos are applied directly to the cutting surface for a perfect knife finish.
The handle is ergonomically shaped for a comfortable grip during use. This makes cutting meat and vegetables a breeze. The handle is made of Pakkawood. This composite material is a blend of resin and wood, making it both attractive and robust. It's resistant to temperature variations and humidity, and won't move a millimeter over time. That's why it's so popular with experienced chefs.
The slightly recessed base makes it easy to grip and control. Suitable for right- and left-handed use.
Three stainless steel rivets further strengthen the handle. They hold the full tang blade (which extends to the end of the handle). A stainless steel bolster also balances the piece, linking the blade to the handle.
We recommend washing this Misono chef's knife by hand with a soft sponge and washing-up liquid. Then dry the knife immediately before storing it carefully.
Find out more about the Misono brand:
Misono was founded in 1935. The family business was founded in Seki and initially specialized in kitchen peelers. In the 60s, it diversified into kitchen knives.
Some fifty experts produce 150,000 knives a year for Misono. The entire knife production process is carried out in-house (although it's true that many producers of this size have certain parts of their knives made by other, more specialized companies).
Misono's knives are inspired by the production techniques of Japanese master blacksmiths. Many of the manufacturing stages are carried out entirely by hand by expert cutlers.
Make the choice of quality and durability with this chef's knife for slicing, chopping and mincing your meat and vegetables every day!
