The Misono 440 21cm Japanese chef knife gives you a clean, perfect cut while offering good corrosion resistance and a long-lasting cutting edge.
This chef's knife is part of the 440 range, named after the steel used: 440C. This alloy offers excellent resistance to the effects of corrosion. Its characteristics are similar to those of VG10, but it has been enriched with molybdenum and chromium. Its particular resistance to corrosion is the delight of professional chefs.
The 21cm blade has an asymmetrical cutting angle, without being one-sided. The blade penetrates the flesh delicately and precisely without damaging it.
The knife has a hardness of 58/59 HRC on the Rockwell scale, enabling the cutting edge to last cut after cut. As for sharpening, it should be noted that it takes a little time on this knife due to its fairly high chromium content (which nonetheless gives it its high resistance to corrosion).
Brand logos are applied to the cutting surface for a perfect finish.
The knife's ergonomic handle makes cutting easy and comfortable. It is made from a composite material: Pakkawood. This material is a blend of resin and wood, resulting in a handle that is both aesthetically pleasing and robust. It is resistant to temperature variations and humidity. That's why it's so appreciated by seasoned chefs.
The slightly recessed base makes it easy to grip, and allows for a controlled gesture whether you're right- or left-handed.
Three stainless steel rivets are set into the handle. They hold the full tang blade (which extends to the end of the handle). A stainless steel bolster also balances the piece.
As for maintenance, the knife should be washed by hand. Use a soft sponge and washing-up liquid. Wipe dry before storing.
A few words about the Misono brand:
Misono was founded in 1935. The family business was born in Seki and initially specialized in kitchen peelers. In the 60s, it diversified into kitchen knives.
Today, Misono is considered the oldest manufacturer of Western-style knives in Japan. Some fifty experts produce 150,000 knives a year. Misono manufactures 100% of its own knives, from the design of the blade to that of the handle (whereas many producers of this size have certain parts of their knives made by other, more specialized companies).
The company's production techniques are inspired by those of Japanese master blacksmiths. Many stages of production are carried out entirely by hand by our experts.
Whether you're a passionate amateur or an experienced chef, the Misono chef's knife will satisfy you with its high performance and durability! Its sleek, timeless design will win you over.
