A Japanese damask knife designed for precision
The Yuzo Ryuho universal Japanese damask knife embodies a subtle balance between traditional aesthetics and modern cutting performance. Made in Japan, it is inspired by the Japanese cutlery techniques that have made Japanese blades famous the world over.
The name Ryuho, which translates as "Dragon's Treasure", evokes a precious blade crafted to the highest standards. This name reflects the attention paid to materials and forging work, in order to obtain a knife as elegant as it is efficient.
With its 15cm blade, it quickly becomes an everyday ally: carving fruit, slicing vegetables, preparing fresh herbs or cutting small pieces of meat. Its intermediate size offers excellent maneuverability while maintaining cutting precision.
Its spectacular damask pattern is reminiscent of drifting ice, giving the blade a unique visual relief that changes with the light. This refined aesthetic accompanies a technically demanding design, conceived for cooks who seek a clean, fluid and durable cut.
A damascened SG2 blade with a long-lasting cutting edge
The 15cm blade rests on a damascened structure, composed of alternating layers of stainless steel. This construction protects the core of the blade while creating a unique natural pattern across its entire surface.
At the center is a core of Japanese SG2 powder steel, an alloy renowned for its fine grain and high performance. With around 1.3% carbon, this steel achieves a hardness of around 63 HRC on the Rockwell scale. This high hardness promotes remarkable edge retention, enabling you to space out sharpening sessions while maintaining a precise cut.
The damask surrounding this core also adds protection and flexibility to the blade, improving its resistance to the stresses of everyday cutting. The surface is enhanced by a mirror finish, which fully reveals the damask pattern. This polish accentuates its depth and reinforces the blade's visual elegance.
Theflat cutting edge completes this technical design: it guarantees effective penetration of food and clean cutting, without crushing delicate textures.
A naturally grained olive wood handle
The handle is made from olive wood, a species appreciated for its pronounced grain and warm nuances. Each piece has a unique natural pattern, making each knife slightly different.
Olive wood is also renowned for its good resistance to humidity and its balanced density, two qualities appreciated in a culinary environment.
Its traditional octagonal shape improves grip and enables precise control when cutting. This geometry is suitable for both right- and left-handed users, and provides a natural hold for the knife during repeated gestures.
The balance between blade and handle makes use smooth and pleasant, whether for quick preparations or more meticulous cutting.

Use and care
To preserve the performance of your Ryuho universal Japanese knife, use it on a wooden or soft synthetic board. Hard surfaces such as glass or stone can damage the cutting edge.
After use, wash the blade by hand with a soft sponge and mild soap. Dry immediately with a clean cloth to avoid any traces of moisture. The dishwasher is not recommended, nor is prolonged soaking in the sink. For optimum sharpness, regular sharpening with a Japanese stone is recommended.
Seki's knifemaking expertise
The Ryuho range is made in Japan, in the Seki region, an area renowned for its blade-making expertise. For centuries, this town has been developing unique know-how in the design of knives and cutting tools. Heat treatment and sharpening techniques have been perfected here over the years to produce blades that are both precise and durable.
Today, the region's manufacturers perpetuate this heritage by combining the traditional knowledge of Japanese cutlery with modern steels. The use of high-performance alloys such as SG2 steel enables the design of knives adapted to the demands of today's kitchen. This approach guarantees reliable blades, designed to deliver a clean, even cut in a wide range of culinary preparations.
