Even top-of-the-range knives, such as those offered by Wusthof, need a minimum of maintenance. Invest in this Wüsthof round-bit sharpening steel to care for all your steel knives.
The Wüsthof Classic Ikon white sharpening steel features a 26cm stainless steel bit. The handle is attached to the steel with three stainless steel rivets.
When sharpening steel knives, it's essential to opt for a good-quality sharpening steel. An unsuitable tool will not restore the blade's sharpness and could even damage it.
For slightly dull blades, we recommend using a standard-cut sharpening steel. This type of tool is suitable for everyday use. However, if knives are too dull, we recommend using a diamond or ceramic sharpening steel to restore their cutting edge.
Choosing the right length of sharpening steel is crucial. In general, the length of the wick should be equivalent to that of the longest knife you intend to sharpen. It is therefore advisable to take into account the potential purchase of a longer knife when choosing the length of the Sharpening steel.
A few strokes on each side of the knife through the sharpening steel is all it takes to keep the blade sharp. Using the Wüsthof Classic Ikon 3040485026 sharpening steel realigns microscopic metal particles without removing any material. In other words, the whetstone corrects what forms with regular use. This distinguishes it from a sharpener, which removes material.
Over time, its surface can become dull. However, it can be easily cleaned with a paper towel and a small amount of olive or sunflower oil. The handle is also easy to clean.
We advise you to use a low-abrasive steel sharpening steel for daily knife maintenance, while for more extensive sharpening (as in the case of a very dull blade), it's best to opt for a more abrasive ceramic or diamond sharpening steel.
