More about Ambrogio Sanelli

Ambrogio Sanelli has been in business for over a century. The company was founded in the village of Premana, in the Italian Alps, where iron has been worked for centuries. In the early days, its core business was the production of simple iron tools.

Today, the Italian brand unveils several ranges of professional knives as well as efficient kitchen Utensils such as their superb truffle graters. Distributed in over 70 countries, Ambrogio Sanelli is a benchmark choice for all food professionals.

Blending traditional craft techniques with modern technologies, the brand produces efficient, long-lasting knives that will accompany you for many years to come.

The knives are the result of 27 stages of production. These include laser-cutting of the steel, heat treatment, polishing, injection-molding of the handles, laser marking of the blades and even packaging.

Ambrogio Sanelli Supra, a range recommended for professionals

The blade of your Ambrogio Sanelli Supra salmon knife is made from Nitro B, a nitrogen-enriched stainless steel. The nitrogen added to the blade makes the steel harder (as if carbon had been added), yet stainless. Nitrogen content is 0.1%.

Carbon, essential for hardness, is then added at a level of 0.5%. There is also 14.5% chromium to ensure even greater resistance to corrosion. Vanadium and molybdenum are also present to enhance all the advantages listed above.

Once the blade has been created, it undergoes various tests to guarantee its conformity. First of all, hardness is tested to ensure that the heat treatment has been successful (which also impacts cutting capacity, corrosion resistance and food conformity).

The blade's roughness is then tested to ensure that the PEAK treatment (semi-polishing) is effective, guaranteeing good glide in food and better resistance to corrosion.

The brand then carries out a corrosion test by immersing the knife in an immersion tank (to check for oxidative spots).

Thecutting angle is then checkedusing a laser, and the knife's sharpness is verified.

Thanks to all this, you can be sure that the knife will be extremely efficient and durable.

Finally, the blade is laser-marked to ensure authenticity and traceability.

The handle of your Supra salmon knife is made of SEBS elastomer, a rubber-like material that offers good resistance to acids, temperature variations and shocks. It is enhanced by an antibacterial agent.

Its non-slip surface makes it safe to use.

It also features a marked guard with softened edges that make the knife easy to clean (its soft edges prevent food from getting stuck inside). This is accentuated by the perfect grip between blade and handle.

A Supra knife that meets professional standards

Your salmon knife can be sterilized, guaranteeing impeccable hygiene. It also complies with NSF standards. You can use it in professional kitchens with your eyes closed. Available in sizes: 28cm and 32cm.
