A precise method for every blade
This electric knife sharpener is equipped with a DF-150 600-grit conical diamond grinding wheel. Its slow rotation speed of 150 rpm removes only a small amount of steel and minimizes heat build-up. This helps preserve the blade’s hardness, ensuring it retains its cutting performance through repeated sharpening. A magnet collects the metal particles produced during the sharpening process.
The patented guide allows for gradual adjustment of the angle between 8° and 22° on each side. Each bevel is sharpened separately, with the option to choose a different angle on each side or to work on a single bevel. This design is therefore suitable for several complex profiles, particularly certain asymmetrical blades such as yanagiba or deba, depending on their geometry.

Tips for Sharpening
Set up the machine on a stable surface, then adjust the angle to suit the blade. The EM-15 marker helps ensure the bevel is correctly positioned in the guide. Move the knife forward without applying excessive pressure, and sharpen each side separately. Then run the blade over the PW-160 disc to remove burrs. The diamond grinding wheel is for dry use only. Clean the magnet and surfaces with a dry cloth after use.
